Food | Homemade Pesto.

I am obsessed with home cooking at the moment, I'm not sure why but I feel as if it is so relaxing to me, unlike those teenage years where the only time I would enter the kitchen is to raid it when I got home from school!

for this dinner I wanted to keep it quite light as I find pasta is pretty heavy for an evening meal so I boiled some wholegrain spaghetti from waitrose, before draining all the water and tossing it lightly with a Tbs of virgin olive oil.

While that was cooking i washed drained and cut up a cup of kale and a cup of broccoli before boiling them in a saucepan filled with lightly salted water for 5 minutes. After removing them, I sautéed them in coconut oil and lemon with a little bit of garlic paste.

to make my pesto, I blended together a teaspoon of garlic paste, a squeeze of lemon,  to cups of basil leaves, pine nuts olive oil and parmesan.

All took about 20 minutes start to finish and is delicious.
